Kale Pesto Pizza

This fresh take on plant-based pizza night uses naan for the base, nutrient-rich kale pesto, and melty mozzarella cheese topped with tomatoes and pine nuts! It's healthy, easy-to-make, and totally delicious. 

Ingredients (per pizza):

1 naan bread
1/4c pesto
1/2c chopped kale
1tsp olive oil
1/2c mozzarella @treelinecheese
1/4c cherry tomatoes, sliced
2tbsp pine nuts


Pesto:

1c packed basil
1c packed kale
2tbsp nutritional yeast
3tbsp olive oil
2tbsp cashews
1tbsp lemon juice
1-2tbsp water
1tsp minced garlic
1/4tsp salt

Instructions

1)For pesto: blend all ingredients together in a high speed food processor until smooth. Add water to thin as needed until desired consistency is reached.
2)Preheat oven to 450F
3)Massage chopped kale in olive oil until evenly coated
4)Place naan bread onto a baking pan. Spread pesto onto naan in an even layer. Next, spread mozzarella cheese across naan. Add on cherry tomatoes and kale. Then scatter pine nuts on top.
5)Bake for 11-13mins until cheese is bubbly and crust is lightly golden. Add extra pesto + chilli flakes on top if desired and enjoy!
