Matzo Mac & Cheese, but make it plant-based! Beloved matzo meets three types of Treeline cheeses for a comfort food classic that's a perfect addition to your Passover menu.
9 sheets matzo
2 c nut milk
3 flax eggs (3 tbsp flax seed, 9 tbsp water)
1 tsp salt
½ tsp black pepper
1 bag Treeline Cheddar Shreds
1 bag Treeline Mozzarella Shreds
1 c Treeline Cream Cheese
1 scallion, chopped
Preheat your oven 350°F. Grease a 9x13 baking dish.
In a large dish (bigger than your sheet of matzah!), whisk nut milk, flax eggs, salt, and black pepper. Lay a matzah sheet in the mixture, soaking both sides and letting excess drip off. Transfer the soaked matzah to the baking dish. Repeat for three sheets of matzah to create the first layer.
Dollop cream cheese atop soaked matzah, sprinkle cheddar and mozzarella. Continue this process to create three layers.
Cover with tin foil and bake for 35 minutes. Uncover and bake for an additional 15 minutes. Broil for 2 minutes. Remove from the oven to let cool. Sprinkle with chopped scallions and enjoy!
